It is hard to find a food that's more versatile than rice, and it's hard to find a kitchen tool that's easier to use than a rice cooker. So, to make your weeknight dinners easier, we thought we'd introduce you to some tasty and delicious one pot rice cooker meals. You don't have to be an expert cook to whip up some tasty food in a rice cooker, so let's get into more detail about some of these incredible one pot rice cooker meals!

Greek Lemon Rice

This Greek Lemon Rice can be served with a salad or chicken, and however you serve it, you're sure to love it. To make this recipe, get some basmati rice, olive oil, onion, garlic, a lemon, salt, cumin, oregano, dill, and chicken broth.

How to Make This Dish:

  1. Add three cups of basmati rice to some running water until the water is clear; drain the rice.
  2. Put some garlic, onions, salt, cumin, and oregano into a pan with olive oil. Let these ingredients cook for about five minutes.
  3. Add some lemon juice to your rice and put it in the rice cooker. Then, add the contents from the stove into your rice cooker with some chicken broth.
  4. Turn your rice cooker on and enjoy!

Vegetable Fried Rice

Vegetable Fried Rice is a staple, and the good news is that it doesn't take a lot of work to achieve a tasty dish when you follow this recipe. To make your Vegetable Fried Rice, get some rice, soy sauce, dark soy sauce, sugar, oyster sauce, sesame oil, water, garlic, scallion, carrots, shiitake mushrooms, bok choy, edamame, vegan ham, and diced bell pepper.

How to Make This Dish:

  1. Put rice, soy sauce, sugar, sesame oil, oyster sauce, and water in your rice cooker. Then add your veggies.
  2. Turn on your rice cooker, and add more soy sauce, chili oil, sesame seeds, or whatever garnish suits your liking after it's done.

Claypot Chicken Rice

We love this recipe for Claypot Chicken Rice. It's easy, tasty, and made with ingredients that you probably already have on hand. To make this recipe, gather some chicken, corn starch, Chinese rice wine, sesame oil, salt, vegetable oil, garlic, ginger, shiitake mushrooms, dried Chinese sausage, white rice, soy sauce, Bok choy or spinach, and dark soy sauce.

How to Make This Dish:

  1. Put the cornstarch, rice wine, sesame oil, and salt in a medium-sized bowl and whisk these ingredients together. Put the chicken in the bowl and cover it with the cornstarch mixture. Let the chicken marinate for 30 minutes.
  2. Get a wok, add garlic and ginger to the wok, and let these ingredients cook for around 2 minutes. Then, add the chicken until it's browned; at this point, add in mushrooms and the Chinese sausage.
  3. Put the rice in the wok and cook on high; add in the soy sauce and some sesame oil. After this cooks for a few minutes, add the contents of the wok into the rice cooker with water and run the rice cooker on medium.
  4. Let the rice cooker run for one hour, being sure to check the rice cooker every ten minutes or so.
  5. Once the rice cooker is done, add in the veggies and cook for another 10 minutes (still in the rice cooker). Finish the dish off with some soy sauce and sesame oil, and you're all done!

Mexican Rice

You can put Mexican Rice in a quesadilla, in tacos, in a salad, or eat it by itself. This recipe makes making Mexican Rice simple, so if you're ready to get cooking, gather these ingredients: onion, garlic, white rice, vegetable broth, tomato paste, and salt.

How to Make This Dish:

  1. Get a microwave safe dish and put the onion and garlic inside it.
  2. Take the garlic and onion and microwave it for around 2 minutes.
  3. Put the onion/garlic combination, rice, broth, and tomato paste into your rice cooker. Add some salt, too, to your liking. Stir this combination well.
  4. Turn your rice cooker on and cook up your Mexican Rice! After it's done cooking, you can fluff the rice up with a fork.
